Super Skin Friendly Recipe: Delicious Butternut Squash Soup
I often say that you are what you eat and that what you put in, becomes your skin.
Here’s a delicious recipe for Butternut Squash Soup. Butternut is super skin friendly. It packs a whopping amount of Vitamin A which is great news for slowing down the aging process and for healing acne. It’s also high in Vitamin E, another vitamin critical for clear skin and anti aging. Vitamin C is in butternut squash as well. This vitamin reduces inflammation and speeds healing. It’s also an intrinsic part of collagen production. What a tasty and tummy – warming way to eat your vitamins!
Cherise’s Butternut Squash Soup Recipe
- Saute ¼ cup chopped onions in a little bit of butter until tender.
- Add 3 cups of peeled and chopped butternut squash and 1 chopped medium potato. I leave the skin on for little flecks of color later and for more nutrition.
- Add 1.5 cups of water and 2 packets of OXO chicken bouillon. You can use vegetable bouillon instead, if you like.
- Bring to a boil and then reduce and simmer under the squash is tender, around 20 minutes.
- Use an immersion blender to smooth. Stir in ¼ cup of milk or evaporated milk. The dairy is optional; it makes the soup more creamy.
- Salt to taste; I use sea salt.
