Break Up Turkey Monotony

Ah, Thanksgiving turkey. It is delicious. The leftovers; love them. 

But there are still more leftovers. Hmmm.   

Reheat them again. 

When that loses its appeal, and it does, you switch to turkey sandwiches.  After that, you start eyeballing the neighbor’s dog.  Dogs never get tired of turkey, do they?  Surely that dog would love some of our turkey, snuck over the fence? 

Hey. That turkey is good for you. It’s a high quality source of lean protein. Make one more round of sandwiches. Break up the monotony with this super easy and delicious pea soup. Throw something clever in the sandwich, like fresh apple slices.  Everyone will be delighted by the soup and distracted by the apple.  The neighbor’s dog can wait until tomorrow.

Impromptu Pea Soup

Ingredients:

  • 1 bag (450g) green split peas
  • 3 cubes chicken bouillon
  • ½ white or yellow onion, chopped
  • 3 whole bay leaves
  • 1 cup coarsely chopped carrots
  • 6 cups cold water
  • Some olive oil

Thinly coat bottom and lower sides of interior of pot with the olive oil.

Add  water, peas, chicken broth cubes and bay leaves.  Heat on high, stirring occasionally.  Bring to a boil.  Reduce to medium heat and cover for 10 minutes.  Stir occasionally.

Add chunks of carrot, reduce to low medium heat for one hour.  Cover and stir occasionally. 

Remove bay leaves.  Remove from heat and cover.  Stir occasionally. 

When ready to serve, re-heat.  Serve with leftover Thanksgiving turkey sandwiches, one more time.  You can do it.
