New Cosmo Lodge restaurant shoots for September opening

After months of delay due to the pandemic and flooding in Little Red River Park, the new operators of Cosmo Lodge hope to get the keys to the building this week.

Jen Kindzerski, the chef and owner behind the popular West Hill eatery Shananigan’s, is acting as a consultant for her friend and fellow chef Barb Lychak who will run the new restaurant.

Kindzerski told paNOW they’re looking have Knotty Pine Bistro open by the first week of September.

“Barb still has to get in there, get everything sorted out and we need to get some equipment brought in,” she explained. She added the city recently completed some renovations and painted the building.

The five-year operating contract between the new restaurant and the city began on May 1 of this year.

Although things are off to a slow start, the new operators have plenty of creative ideas for when they are ready to welcome the public.

“Once we can have entertainment and stuff, we’re looking forward to doing something out on the grounds like a cabaret,” Kindzerski said. “Or a bunny kind of thing for kids at Easter.”

Inside, she explained, patrons can expect espresso, fresh baked goods and desserts, along with breakfast and lunch menus.

Eventually, they’d also like to get a liquor licence and potentially add a dining menu with higher-end offerings like steak, she added.
