P.A.’s Executive Chef goes north

A Yukon book launch will have northern flavour provided by a Prince Albert chef.

Kevin Tetz, owner of the personal chef service called Executive Chef, is heading to Whitehorse to cook at the launch of The Boreal Herbal by Bev Gray.

All the ingredients used for the launch will be from the local boreal area of the Yukon.

“They’re going to take me to the farmers market, the local one, so I can go through that for what I need for the weekend and go from there I guess,” he said.

While he is familiar with some of the ingredients, others will take some learning, Tetz said.

“I’ve been around dandelions because my mom has come from the farm, they had dandelions stuff and berries and we grew up with all of that stuff.”

He’ll spend a couple of days before the launch learning from the locals how to prepare dishes using wild stinging nettle, smoked salmon, dried caribou and birch syrup.

One item he has begun experimenting with is spruce tips. He says they are like rosemary, and used in the same way, but less strong.

His new knowledge will come back with Tetz when he returns to Prince Albert.

“The boreal forest is in this area too and not many people realize how much is out there, from the mushrooms to the fiddleheads,” he said.
