New Co-op to open mid-June

The new Prince Albert Co-op might be behind schedule, but the general manger says it will be worth the wait.

The new store was scheduled to open on Friday, but Dave Marchant, general manager, said the date will be pushed back about three weeks.

The date was set a year ago and a few delays – such as things not being shipped on time – are the reasons for the change in timeline, he said.

“Around mid-June we should be opening the new store.”

Marchant is getting excited as the facility is coming together.

“Every day that I go into that store I get more and more excited, this is going to be a unique store for our system,” he said.

The new store has a fresh focus, with an expanded bakery, deli, produce and meat area.

There will be more in-store made products. It features a salad bar, in-store smokehouse and the ability to slice your own fresh bread.

The store will also be expanding their locally grown produce, Marchant said.

“I think it is a general trend in the industry and certainly being able to consume local vegetables means they’re fresher because they are coming right in from (the farm), instead of being transported from a different country or other parts of the country, “ he said, adding they will be able to support the local economy and local people.

Until the changeover, the downtown store will remain open, he said.
